As we mentioned yesterday, one of Vancouver’s most hotly anticipated culinary events is taking place at this fall’s Vancouver Home + Design Show: the inaugural Savour Thursday Dessert Duel, happening Thursday, October 11 at 6pm on the Savour Your Life Cooking Stage.


Every Thursday in August, we’ll be profiling one of our three esteemed competitors. First up? Bruno Feldeisen, executive pastry chef of YEW Restaurant & Bar at the Four Seasons Vancouver.

Hometown: Small town in France – I’m first-generation French, born and raised.


What’s your regular coffee order? Skinny small cappuccino


What three items do you always keep in your purse/pockets? House keys in my left front pants pocket, my wallet in my right back pants pocket. Always!


What was your first job? Making chocolate candies in a 100-year-old chocolate shop.


How were you discovered? I’m still in hiding!S


Most memorable career moment to date: Being nominated for a James Beard Award. I have been nominated for the Outstanding Pastry Award twice – a very humbling honour.


What famous figure(s) inspires your career? Chef Alain Ducasse, who I had the pleasure of working under during my time at Les Palets d’Or, one of France’s oldest chocolate shops.


If you weren’t in your current occupation, what would be your dream job? Airline pilot


Any embarrassing on-the-job moments you’d like to share? I won't tell you!


Describe your cooking style in five words or less: Local, flavourful, trendy, fun
